Ingredients:
- 1 cup lentils, rinsed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth (low-sodium)
- 1 can (14 oz) diced tomatoes, no salt added
- 1 teaspoon thyme
- Black pepper to taste
Instructions:
- In a large pot, sauté onion, carrots, and celery over medium heat until softened (about 5-7 minutes).
- Add lentils, vegetable broth, diced tomatoes, thyme, and black pepper. Bring to a boil.
- Reduce heat and simmer for 25-30 minutes until lentils are tender.
