Ingredients:
- 1 cup quinoa
- 2 cups water
- 4 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tablespoons olive oil
- Juice of 1 lemon
- Black pepper to taste
Instructions:
- Rinse quinoa and combine with water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a large bowl, combine cooked quinoa, spinach, cherry tomatoes, and red onion.
- Drizzle with olive oil, lemon juice, and season with black pepper. Toss gently to combine.
