Chickpea Salad

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine chickpeas, cucumber, bell pepper, red onion, and parsley.
  2. In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Divide into meal prep containers and store in the refrigerator for up to 4 days.
